I've added an api token to my credentials file, and selected Postmark on the Jumpstart Config. However, emails still don't seem to be sending in production. Is there a step that I've missed?

Yes, you have to go to the postmark website and finish the configuration there. I believe there's an extra step you have to take with sending a test email and making sure it's approved.
